Se puede decir que este cocinero se ha criado entre fogones y cazuelas, con un aprendizaje desde peque\u00c3\u00b1o que lo ha llevado a dominar todos los secretos de la pasta fresca y de la tradici\u00c3\u00b3n culinaria \u00e2\u20ac\u02dcabruzzesse\u00e2\u20ac\u2122.<\/p>\n<p><strong>Como se fund\u00c3\u00b3 el restaurante?<\/strong><\/p>\n<p>Mi padre lleg\u00c3\u00b3 a Figueres con un sue\u00c3\u00b1o de abrir un restaurante. Un sue\u00c3\u00b1o que hab\u00c3\u00ada heredado de mi abuelo. Mi padre y mi madre lucharon para ahorrar un dinero y con estos ahorros llegaron aqu\u00c3\u00ad y abrieron el restaurante Augustea, que en sus or\u00c3\u00adgenes era un local m\u00c3\u00a1s peque\u00c3\u00b1o que el actual. De eso hace ya 28 a\u00c3\u00b1os, si no me equivoco.<\/p>\n<p><strong>Y cu\u00c3\u00a1nto tiempo hace que est\u00c3\u00a1s en el frente del negocio?<\/strong><\/p>\n<p>Al frente, lo que se dice en el frente, hace algo m\u00c3\u00a1s de un a\u00c3\u00b1o, pero desde los 15 a\u00c3\u00b1os he trabajado con mi padre y lo he aprendido todo de \u00c3\u00a9l. Eso s\u00c3\u00ad, entonces no ten\u00c3\u00ada la presi\u00c3\u00b3n que puedo tener ahora.<\/p>\n<p><strong>\u00c2\u00bfCu\u00c3\u00a1l es la tradici\u00c3\u00b3n culinaria de Augustea?<\/strong><\/p>\n<p>Hemos traido a Figueres una cocina de tradici\u00c3\u00b3n \u00e2\u20ac\u02dcabruzzese\u00e2\u20ac\u2122, originaria de la regi\u00c3\u00b3n italiana de Abruzzo, que destaca por la calidad de la comida reci\u00c3\u00a9n hecha, especialmente la pasta fresca. Yo cada ma\u00c3\u00b1ana me levanto temprano para hacer la masa de la pasta para hacer raviolis, fetuccini, \u00c3\u00b1oquis, porque hacerlos frescos lleva mucho trabajo. Y es muy importante hacerlo todo a la vez, especialmente el salteado. Y eso es lo que mi padre ha llevado hasta aqu\u00c3\u00ad, y yo mantengo ahora.<\/p>\n<p><strong>Ha incorporado alg\u00c3\u00ban elemento de la gastronom\u00c3\u00ada catalana a su cocina?<\/strong><\/p>\n<p>B\u00c3\u00a1sicamente nos hemos fijado en algunos productos que aqu\u00c3\u00ad se utilizan mucho, como el ajo, aunque tambi\u00c3\u00a9n es un producto italiano, pero aqu\u00c3\u00ad gusta mucho y lo hemos incorporado a algunas recetas. Aunque tambi\u00c3\u00a9n hacemos platos que gustan a otras culturas, como el frutti di mare con salsa al curry, el vino blanco o con tomate.<\/p>\n<p><strong>Qu\u00c3\u00a9 platos recomendar\u00c3\u00ada a una persona que viene por primera vez en el restaurante?<\/strong><\/p>\n<p>En pizzas, una de mis especialidades que tambi\u00c3\u00a9n gusta mucho es la pizza espagueti, que es una pasada. \u00c3\u0161ltimamente hemos incorporado la pizza filo, que est\u00c3\u00a1 hecha de dos capas de filo y que se puede hacer con marisco o con carne y en pasta, los que te he mencionado antes de frutti di mare, y el Aguste, con champi\u00c3\u00b1ones, ternera , tocino, vino tinto, tomate y un toque de picante, y la boscaiola \u00e2\u20ac\u00a6<\/p>\n<p><strong>Precisamente te quer\u00c3\u00ada preguntar cu\u00c3\u00a1l es el secreto de la famosa boscaiola?<\/strong><\/p>\n<p>Te digo lo mismo que a todos los clientes. No tengo ning\u00c3\u00ban problema en decirte los ingredientes, pero tambi\u00c3\u00a9n tengo que decir que incluso a m\u00c3\u00ad, cuando la preparo en mi casa, no me queda igual. Concretamente lleva mantequilla, cebolla, pimiento, champi\u00c3\u00b1ones, tocino y crema de leche. Pero tambi\u00c3\u00a9n recomiendo que se pruebe la pasta con salsa de salm\u00c3\u00b3n, que a m\u00c3\u00ad me gusta mucho.<\/p>\n<p><strong>Las salsas marcan la diferencia?<\/strong><\/p>\n<p>Las salsas son muy importantes, y junto con la elaboraci\u00c3\u00b3n de la pasta fresca a momento es donde yo creo que nuestro restaurante marca la diferencia. Y lo mismo con la pizza, que tambi\u00c3\u00a9n tiene su secreto y lleva su trabajo, porque la nuestra no es preparada, hacemos la masa cada d\u00c3\u00ada. Y la hacemos, adem\u00c3\u00a1s, con una levitaci\u00c3\u00b3n que no supere las 24 horas, lo que hace que tenga menos gluten y que cueste menos de digerir.<\/p>\n<p><strong>Tiene alg\u00c3\u00ban proyecto de futuro?<\/strong><\/p>\n<p>S\u00c3\u00ad, alg\u00c3\u00ban proyecto hay sobre la mesa, pero a\u00c3\u00ban no es el momento de explicarlo.
